Ditch the takeaway menus this week and try a delicious homemade fakeaway recipe that can be adapted depending on the number of people, appetites and tastes!

This week, we’re recommending a sumptuous meal of Stir-fried Beef with Ginger and Spring Onions. The great part about this recipe is that you can swap out the beef and try this with prawns, chicken or pork if you wish!

Stir-fried Beef with Ginger and Spring Onions Ingredients



500 g beef strips
2 cloves garlic finely chopped
2 cm ginger finely chopped
1 onion sliced
80 ml oyster sauce
3 tbsp soy sauce
2 tbsp rice vinegar
1 tsp granulated sweetener optional
1 red pepper
1 yellow pepper
1 green pepper
5 large mushrooms sliced
4 spring onions sliced
5 baby corn
low calorie cooking spray

Method



1. Gently heat your wok and spray with low calorie spray. You could also use a large frying pan if you did not have a wok available.
2. Add your beef to the wok just to colour the meat, but not to cook through. Once browned, set the beef aside.
3. Add some water and 1 tbsp of rice vinegar to your pan and spray some more low calorie spray onto the pan. 4. Time to fry off your chopped garlic, onion, ginger and mushrooms until the onion has softened.
5. Add your rice vinegar, oyster sauce and soy sauce and allow the sauce to cook until it thickens.
6. Now it’s time to add your browned beef back into your wok with the chopped spring onions and allow this to cook for a further 5 minutes before adding your peppers and baby corn.
7. Allow your dish to cook for a further 2-3 minutes before serving.
