CUPCAKE INGREDIENTS

  • • 250g butter
  • • 250g caster sugar
  • • 250g self-raising flour
  • • Pinch of salt
  • • 4 medium eggs
  • • 60ml (4 tablespoons) milk

METHOD FOR THE PERFECT CUPCAKES

  1. Preheat the oven to 190C.
  2. Soften the butter in a big mixing bowl, then add the sugar, flour, salt, eggs and milk and whisk until smooth.
  3. Line a muffin tin with cupcake cases and spoon in the mixture, this recipe makes 24 cakes.
  4. Place in the oven and bake for 15 minutes, then rotate if needed and bake for a further 3-7 minutes, until the cupcakes are a light golden colour.
  5. Leave the cupcakes to cool in the tins for a few minutes, then transfer to a wire rack.
  6. Wait until the cupcakes are completely cool, then ice with your preferred flavour icing – add food colouring for fun colours!

Cook’s notes
• Lift the sieve as high as you can - it's important to get plenty of air into the cake so that it comes out light and fluffy.
• Don't open the oven unless necessary - as the cake cooks don't be tempted to peek in as this will prevent your masterpiece from rising.
• Don't under or over mix - make sure you follow the recipes for guidelines, if you don't mix enough, your batter could by lumpy but if you over-mix you could end up with tunnels in your cake.
• Measure, measure, measure - they say baking is a science, so make sure that each ingredient is measured carefully and accurately.
