HOW TO: Make the ultimate WFH sandwich with @chetnamakan
Join @chetnamakan, food writer and cook book author as she shows us how to make the perfect WFH sandwich.
Ingredients:
- 2 slices of sourdough
- 1 tbsp olive oil
- 6 slices of courgette
- 6 slices of aubergine
- Softened salted butte
- 1 tbsp basil pesto
- 4 slices of tomatoes
- Pinch of salt
- Handful of grated cheddar
- Handful of mozzarella, torn up into pieces
Method:
- Heat the oil in a pan and cook the courgette and aubergine slices until golden. ⠀
- Take one of the sourdough slices and spread a little butter on it, followed by 1/2 tbsp of pesto. Then place the cooked aubergine and courgette and then the tomato slices. Sprinkle a pinch of salt and then put the cheddar and mozzarella on top. Spread some pesto on the other slice and seal the sandwich. ⠀
- Butter the outside of the sandwich.⠀
- Heat a pan and cook the sandwich until crispy and golden.
Enjoy it warm!
